"Arch-Shri" one of the loveliest friendships that started almost 13 years ago and still going strong presenting to you all an unique virtual party to celebrate their friendship😃 Happiness is cooking for your bestie and relishing with long lasting shenanigans from here and there...but since the current situation doesn't allow us to meet...both me and Arch decided to participate in this wonderful pair contest. I made an amazing exotic appetizer which is her favorite "Mexican bites" and Arch prepared some exotic drink which is my favorite "Strawberry Diaquiri Mocktail " and we relished them over a video call and enjoyed the sweet moments💃 Swipe left to see our creation!!! Ingredients: 1 tsp olive oil ,1 tsp cumin seeds,1 onion finely chopped , 2 finely chopped green chilly , 2 garlic cloves, 2 homemade wheat flour tortillas( chapati) 1/2 cup cooked black beans, 2 tbsp Mexican salsa, 1/4 cup chopped celery salt and red chilly powder to taste,1 large tomatoe finely chopped, 1 tsp oregano cumin powder. Method: Heat a small pan ,Add the olive oil, cumin seeds ,minced garlic, green chili onions, and cook on high for 3 minutes add tomatoes sauté it for a 2 minutes add salt , red chilly powder,cumin powder , oregano ,cooked black bean , now take of the half of this mixture let it cool and then grind it to a smooth paste. For remaining curry add 2 tsp tomato salsa mix well sauté for 2 minutes and set aside .Now make a wheat tortilla and cut it into heart shape by using cookie cutter and bake them .spread a black bean paste ,now add prepared mixture 1 tablespoon of tomato salsa, and chopped celery (optional) and Serve warm.
Vegan Mango Coconut Milk Smoothie : I love to relish mangoes every single day in spring !! Method : In a blender add banana ,mango, coconut milk, maple syrup blend all until it’s smooth pour it to a smoothie bowl and top it with chia seeds, walnuts and desiccated coconut. These Vegan Gluten-free Warm Spicy Peanut Soba Noodles are the perfect combination of sautéed veggies like carrots, cabbage , warm soba noodles and spicy peanut sauce!! INGREDIENTS: 2 cup organic peanut butter,1/4 cup low sodium soy sauce,2 tbsp sesame oil/olive oil ,2 cloves garlic,1/2 inch fresh ginger grated,1/4-1/2 cup water as needed. FOR SOBA NOODLES Organic Soba noodles dry,1 tsp sesame oil/ olive oil ,1 cup purple cabbage diced,1/4 cup chopped cilantro, 1 cup Julian carrots , 1/2 cup asparagus , 1/4 cup red onion , 1/2 cup broccoli. Method : Prepare peanut sauce by combining peanut butter, soy sauce, sesame oil, garlic, ginger,1/4 cup of water in mixing bowl and mix well with whisk, add additional water if needed. Fill a pot with water and bring to a boil. Add soba noodles and cook according to package instructions. Drain and set aside. Heat sesame oil in a pan over medium-high heat. Add veggies and sauté for 2 minutes – do not to overcook . Add cooked noodles & peanut sauce to the pan. Stir to combine. Method : In a bowl take sabudana and soak with enough water for 3 hours, drain off the water completely now take the soaked sabudana in a bowl add potato peanuts add ginger paste, chilli, coriander and salt mix and mash well with your hand. Neer Dosa ( Brown rice and coconut crepes ) Neer Dosa, a thin, soft and lacy crepe made from rice better is a popular food item in South India, belongs to Karnataka cuisine. Neer means “water” and the batter of this dosa is very watery hence it is called neer dosa (watery dosa). This lacy dosa is very easy to make at home because it doesn’t require any fermentation process like other dosas. Ingredients: 1 cup organic brown rice / dosa rice 1/2 cup coconut (grated),1 tsp salt 2 1/2 cup water. Method : Soak rice for 6 hours,drain off the water completely and transfer to blender,add coconut blend to smooth paste without adding much water. add water,mix well making sure the batter is thin watery consistency.Carefully pour the dosa batter over hot skillet,cover and cook for 1 minute on medium flame.Once the dosa is cooked completely, it is ready to serve. Donot cook neer dose on both sides. Serve neer dosa immediately with tomato and mint chutney. Happy Ugadi Friends !! ( Happy New Year to all ) Godhi Huggi – (Whole Wheat Jaggery payasa )Traditional Sweet of North Karnataka! Festivals and marriages are incomplete without this most popular North Karnataka sweet delicacy “Godhi Huggi”. Godhi means wheat and Huggi means payasa/payasam. It is loaded with the goodness of wheat and flavour of jaggery, ghee and dry fruits. Godhi Huggi is traditionally made using polished wheat, if you don’t find polished whole wheat grains, you can try it with wheat dalia or broken wheat. Ingredients: 1 cup Whole Wheat (Godhi)1 1/4 cup Jaggery,3-4tsp Ghee (Clarified butter)8-10 Cashew nuts,8-10 Raisins,3-4 tsp Grated dry coconut ,1/2 tsp Cardamom powder, 2tsp Poppy seeds,1/2 cup Almond milk (optional) ,Water-4 cups to pressure cook . Method : Wash the Whole Wheats thoroughly,siak them for 10-12 hours.Cook them in Pressure cooker with enough water for 10-12 Whistles. Wheat should become very soft to eat. Take a pan, heat it on medium heat. Add boiled Wheat and Jaggery to it. Bring it to boil, wait till all the Jaggery melts.Turn off the heat, keep it aside. In another pan, fry Poppy seeds for 1-2 min. Keep them aside.Add Ghee to pan, fry Rains and Cashew Nuts.Add Poppy Seeds, fried Raisins, fried Cashew Nuts, dry coconut, Cardamom powder to wheat and Jaggery mix.Mix well. Patatas Barvas : Spanish Delicious Fried Potatoes with Spicy Sauce !! Patatas bravas is a classic Spanish taoa and famous street food . Crispy potatoes topped with spicy tomato sauce and garlic aioli a simple but super tasty recipe! Thanks for the wonderful opportunity try something new and contribute to this lovely collab guys . Ingredients: Russet potatoes cut into chunks, 1 tsp salt 1 1/2 tsp pepparika, 1 bay leaf. Tomato Brava sauce with aioli. 3 cloves garlic minced,1 tsp smoked paprika,½ tsp oregano,3 tbsp organic mayonnaise, ½ tsp cayenne pepper½ tsp salt,3 tbsp tomato ketchup/ paste mix all the ingredients well .. Barvas sauce is ready . Method : Place potatoes in a medium saucepan and cover with 2 quarts water. Add bay leaf , pepprika,and 1 tsp of salt and bring to a boil over high heat. Cook until potatoes are tender, Drain and set aside. Heat 3 tablespoons of olive oil in a pan over medium heat. Once it's shimmery, add the potatoes and cook for about 20 minutes. Stir occasionally to make sure they get golden and crispy on all sides. Once the fried potatoes cools down roll them in a pepper, salt and peparika mixture , now serve them in a serving plate and add the Barvas Sauce on top and enjoy!! Vegan gluten-free carrot cake with vegan cheese frosting!! This moist and tender carrot cake is studded with cashew nuts and laced with cinnamon and warming spices for a perfect sweet treat with tangy cashew lemon frosting!! INGREDIENTS 1 cup unsweetened applesauce,2/3 cup coconut sugar,1 tbsp lemon juice1 tsp vanilla extract,1/2 cup almond milk ,1/3 cup tapioca starch,2 1/2 cup almond flour ,1 tsp baking powder,1 tsp baking soda1 tbsp cinnamon, 1 tsp ginger,1/4 tsp salt1 1/2 cup grated carrots,1/2 cup chopped cashews/ walnut cashew yogurt frosting: 1 cup raw organic cashews (soaked overnight) 1/3 cup full fat coconut milk , 2 tbsp maple syrup,1 tbsp lemon juice 1 tsp vanilla extract,Pinch of salt INSTRUCTIONS Preheat the oven to 350F.To a mixing bowl, add the applesauce, coconut sugar, lemon juice, vanilla, and milk. Whisk to combine.Add the tapioca starch, oat flour, baking powder, baking soda, spices, and salt. Stir to combine.Fold in the grated carrots and walnuts. Transfer to a baking pan that has lined parchment paper.Bake for 30 minutes. Remove from the oven and cool completely before frosting. Drain the cashews. Combine all the frosting ingredients in a high speed blender and blend until smooth and very creamy. Vegan baked Greek Veggie Balls!! These Greek veggie balls are filled with plant-based goodness like black eyed beans and sun-dried tomatoes some fresh herbs and these are baked so they are totally healthy and guilt free indulgence. Thanks for the wonderful collab. medium red onion quartered,3 cloves garlic 1/4 cup sliced tomatoes,1/4 cup fresh cilantro ,1 tsp oregano ,1 tsp red chili powder, 1/2 tsp salt , 1 tbsp ground flax seed, 1/4 cup multigrain bread crumbs, 1/2 cup almond meal 1/2 lemon, juiced. Method : In the container of a food processor place red onion, garlic, tomatoes,cilantro ,oregano, red chili powder , and salt Process until finely chopped.Add flax seeds, breadcrumbs, nut flour, and lemon juice and process until combined.Add black-eyed peas , and process just a few seconds until the peas are mashed, but not pureed.Remove mixture from food processor and refrigerate for 30 minutes. Preheat oven to 375 degrees F.Roll veggie balls with your hands, and place on a baking sheet lined with parchment paper.Place on top rack of the oven. Bake for 55-60 minutes, until veggie balls are cooked through and golden brown on surface. Zucchini is packed with many important vitamins, minerals, and antioxidants. It has a high fiber content and a low calorie count. INGREDIENTS 1/3 cup maple syrup,1/3cup nut/seed butter, 1 cup grated zucchini,1 1/2 cup almond flour, 1/2 cup tapioca starch,1 tbsp baking powder 2 tsps cinnamon,1 tsp vanilla extract, Pinch of salt. cinnamon streusel 1/2 cup almond flour,1–2 tbsp maple syrup, 1 tsp cinnamon. Method: Preheat the oven to 350F.Using a nut milk bag squeeze out all the excess water from grated zucchini.Add the maple syrup, nut butter, and zucchini to a blender Blend to combine.Add the rest of the ingredients. Add the rest of the ingredients.Blend again stopping to scrape down the sides as needed. Combine all the streusel ingredients in a separate bowl. Mix with a fork until sticky and clumpy. Lightly oil a small baking pan or loaf pan.Spread half of the batter into the pan. Layer on half of the streusel. Repeat with the remaining batter and streusel. Lightly press in the top layer of streusel. Bake for 35-40 minutes at 350F.
