Boogie Street is a smoky London dry gin shaken with mezcal, apricot liqueur, agave syrup and violette liqueur made with violet blossoms presented in a vintage coupe glass with a round ice ball on an in-house assembled sequinned coaster. This take of the Charlie Chaplin and Aviation cocktail is from the Bugis Junction menu from the cocktail programme of @club5sg. Head bartender Ong Jun Han picked a round ice ball for this cocktail to symbolises a disco ball reminiscent of the 1950s to 1980s where Bugis Street was the place for entertainment, girls, boys, food, flowing alcohol and endless debauchery. The mezcal used in the cocktail would remind some of cigar smoke of the 60s. I wonder why I never dined at @bluelotus_sg any sooner. Earlier this week I visited to try highlights of the Chinese New Year menu. The signature Norwegian Salmon Yu Sheng was refreshingly light. The spring onion-infused olive oil and wild honey & yuzu sauce definitely made a difference. Haven’t dined at @parkhotelclarkequay in ages. So when I was here last Thursday to taste this year’s Chinese New Year 🧧 dishes and had a truly enjoyable time. The Yellowfin tuna tataki with white and green radish, purple cabbage, red carrot, pickled vegetables, pomelo, baby radish, orange peel, and gold-dusted coriander leaves. The housemade plum sauce for the Yu Sheng platter is made with lemon juice, sour plum sauce, apple sauce and vinegar. This special sauce is sweet, tart and makes this one of my favourite Yu Shengs tasted so far. The braised sea cucumber, fish maw, baby abalone with broccoli is a common dish done well. The Fragrant Crispy Duck is butterflied, marinated with cinnamon stick, star anise, Sichuan peppercorn, ginger juice, hua Xiao wine, sugar, salt and pepper. Dipped in egg and flour, the duck is deep-fried till crispy. The steamed red Garoupa with yellow bean paste. The paste is made in-house with ginger, red chilli and garlic. You will be yearning for that sauce!! Fans of salted egg yolk will enjoy the Salted Egg Yolk Golden Tiger Prawn. The prawns are butterflied and coated in custard powder, egg, and flour then deep fried. They are so crispy you could almost eat the prawn whole. Enjoy the steamed fragrant rice in lotus leaf with duck meat and Chinese sausage. Crispy Durian is filled with a blend of durian pulp, gula melaka and coconut milk. The superior braised fish maw with crabmeat and homemade stuffed crab claw are also absolutely special. So when Daniel from @SpiritedSG brought me along as his plus one on 29 December for Proper Dinner Pop-up with Brooklyn, New York-based pan-Latin inspired cocktail bar and restaurant @Leyendabk, I thought that it was just the perfect way to end 2020 with great memories. Unfortunately the pop-up has ended. Two @arquitectotequila cocktails on the limited-time menu included a Tequila Sour (Sonambula) and a Leyenda Bloody Maria. Tonight I had dinner at @japanrailcafe with @larvitar. Shawn had the @japanairlines_jal salmon miso yaki meal (S$25) while I had the Chicken Takiawase Tamago meal (S$23) prepared by SATS Kitchen. These two options are served the same way as you would get it when flying economy class onboard Japan Airlines. While I have not flown since November 2019, having experienced this right now brings back fond memories of flying and Japan. This #JRCafeXJAL collaboration is for the month of January. I also couldn’t resist and bought myself a 1:600 JAL B777-200 model aircraft manufactured by @schuco_official. A truly brilliant experience for those who miss flying and inflight food enthusiasts. Couldn’t resist unboxing my Japan Airlines model airplane I bought in Tokyo last September. 

@japanairlines_jal will offer two inflight menus prepared by SATS Inflight Catering and make them available to the public from S$23 at @japanrailcafe at Wallich Street from 2 to 31 January 2021.

They will be served on trays just like in the airplane. Only 600 sets will be available. And JAL a merchandise will also be on sale for aviation enthusiasts.

Si Chuan Dou Hua at PARKROYAL on Kitchener Road has reopened from its two-month renovation on 24 November 2020. Executive Cantonese Master Chef Leung Wing Chung has introduced a selection of new a la carte dishes. The Exotic Garden with Black Truffle in Osmathus Sauce (S$98++ for 2 to 6 or S$148++ for 7 to 12) was a popular lo hei dish. It is now on the menu all-year round. The Steamed Eel with Pumpkin in Homemade Soya Bean Crumb with Dried Scallop, Sakura Shrimps and Prawn Roe sauce (S$22++ for 1) is a very beautiful dish, visually and taste. A Cantonese classic dish is the Duet of Traditional Crispy Chicken stuffed with Glutinous Rice, Goose Liver and Waxed Meat (S$88++ whole for 6 to 8). The Signature Bean Curd Medley (from S$26++) stood out the most for me. Homemade beancurd and deep-fried purple rice tofu are stacked and topped with homemade minced meat sauce. The dried fruits and brioche aromas pairs the champagne well with foie gras, salmon and even Turkey for this festive season.

I got three bottles from @sgepiphanywines and shared them with friends and family over the past few weeks. A beautiful well rounded champagne 🍾.
